Now, let’s quickly look over what a combi oven is and when we need to use it.

Here we go.

What is a Combi Oven?

A combi oven is a device that uses a combination of heat and steam for foodservice operations such as restaurants.


Most professional Combi Ovens have functions that include using heat or steam separately or together simultaneously.

Traditional heat ovens without a steam option are known as convection ovens.

A convection oven only uses heat or ‘convected air’ inside the cooking cavity to cook food by means of electricity (heating element) or gas.

Dual-use ovens are also much more precise, robust and are meant to be used almost 24 hours in some operations.

The first convection oven in wide use was the Maxson Whirlwind Oven, invented in 1945.


The first combination oven was invented in 1976 by the German company Convotherm, and then Rational nearly thereafter.

Today Convotherm is owned by Middleby Marshall which is a conglomerate of Foodservice equipment companies openly traded on the NYSE.

The types of ovens are below, keep reading.

What types of Combi Ovens are there?

There are 2 basic types of Combi Ovens.

  1. Boiler Fed
  2. Steam Injection

Let’s briefly cover the difference.

Boiler fed Combi Oven

Boiler-fed ovens inject steam via a butterfly valve from the boiler inside the oven.
The steam is built up and kept within the cavity until release.

Levels are adjustable from 0% to 100% of possible maximum relative humidity inside the cooking chamber.

This is the type of oven preferred by chefs in fine dining outlets as it gives the operator more saturation, automatic humidity adjustment, and better precision like crispiness and browning of foods.

A Combi Oven with a boiler can work in a “closed system”

If you have an oven that is for example 7 levels, you can cook fish on one level, meat on another, chicken on the third, potatoes on the fourth without the transfer of taste between each-other.

Moving on, here is what a steam injection system is.

Steam Injection

A steam injection system is when water is dropped right onto the heating element spewing humidity into the cabinet.

This isn’t the most precise method vs as a boiler model.

It’s less expensive and preferable only if you have a hard water density which causes calcium build up in the boiler.

Benefits of a Combi Oven in your kitchen

Other then an operationally enhanced method of cooking a Combi Oven it can:

  1. Reduce Shrinkage of Food
  2. Improve quality and taste of Food
  3. Save Time and Labor within your operation
  4. Eliminate Flavor Transfer, as discussed above with “closed systems”
  5. Deliver Consistency 
  6. Option to cook via Sous Vide
  7. Energy Efficiency
  8. Regeneration or Blast/Chill technology (mostly used in banqueting)

I won’t get into much detail on blast chilling here but you should know what regeneration is, which I will discuss in a bit.

But first, these are standard features that most Combi Ovens have.

Cook & Hold 

With Cook & Hold you have the ability to cook food with lower temperatures and for an extended period of time.

You can cook overnight and hold it at an appropriate temperature for when your staff arrives in the morning.

Keeping everyone happy.

Why?

Reduced labor and work optimization.

Start cooking the night before without running around to manage the next day’s service.

Your food will be cooked to perfection. 

You reclaim lost working hours once the lights go out and reduce the load on your staff.

You will also have a more even cook without the burn marks on the outer brim of the meat or chicken.

This is because it is “Naturally Tenderized,” by activating the toughest meats cuts natural enzymes. 

Precise temperatures create perfect consistency throughout the cut of meat.

Which also reduces shrinkage.

Shrinkage happens when water evaporates from the surface of the meat or when fat and juices leak from the meat.

Shrinkage is affected by the cooking method, duration and temperature, and how well done it is.

Take a piece of meat and throw it on a high-power char-grill, you’re bound to have high shrinkage because of the immediate shock (that’s when you hear a meat sizzle).

Cook the same meat in a Combi Oven, it going to be more uniform and keep the same mass.

Cooking Environment

Combi Steamer Ovens allow for a better cooking environment.

They don’t use open end burners which create more heat in the kitchen needing compensated air conditioning – raising up your electrical bill.

With a Combi oven you also save space.

You’ll need fewer appliances if you know how to utilize it within your operation.

That’s because the Combi is more versatile.

For example, you need:

  • A pizza oven to make pizza.
  • A steamer to boil vegetables.
  • A bratt pan to make soups.
  • You need a grill to grill.

Of course within certain quantity limits you can make all of the above in a Combi oven.

It will never completely replace some of the core items like a fryer, gas burners or a char-grill but it can be done under certain operations.

If you’re a pizzeria, and that’s the one main specialty on your menu, I’m not saying to replace a wood-fired pizza oven with a combi.

Not only do they save space back-of-house, now MINI ovens are becoming trendy front-of-house as part of the show cooking experience with a small footprint.



So, what’s the difference between normal and mini?

Mini-Combi ovens save space by also optimizing the workflow and amount of additional equipment needed in the kitchen

The mini vs standard size will accept

It serves better for “A La Carte” Menu items vs using the standard size oven for bulk cooking.

It also has a lower pitch between each level meaning you can cook less food (lower mass).

It will have the same functions as a standard oven as well.

Food & Operational Improvements 

In a combi you can now brown the food with the ability to keep the core of the product tender.

You can also use the oven to smoke salmon or meat with any choice of wood chips.

The first company to introduce cook-hold-smoke is Jerry Maahs from Alto Shaam.

People eat with their eyes as much as they do with their stomach!

Combi-steamers also reduce food shrinkage during the cooking process.

Depending on the product.

Take a piece of meat, if you throw it on a grill that’s 180 degrees…..what happens to the product?

It loses its mass.

On a Combi you can regulate temperature control, time, and steam to enhance the proper cookout of your product.

Another example can be a piece of roast meat.

In a traditional oven you cant regulate time and temperature settings.

There is no probe either.

There are many techniques, but the core ability to manipulate the settings vs other appliances makes the combi more precise and versatile to use in your kitchen.

Touch Screen vs Digital Screen with Knobs

Unless you live in a country with electrical problems that could kill the board or don’t have the budget then a digital screens with knobs are more preferable.

Complete Touch Screens give you a load of options and are simplified to use, save recipes so that this way you can put the oven on autopilot. 

Once you set up the recipes and all variables like steam, temperature, time, you’ll just need to prep food and pop it in.

If you run a franchise operation and are using multiple ovens across a region, these devices can be connected online and programmed from a computer with a complete touch screen.

Some versions of combi-ovens that don’t include a touch screen or computer board won’t allow you to save recipes leaving an operator to program manually each and every time.

Regeneration capability

This feature allows you to prepare meals ahead of time by cooking, then use a blast chiller or shock freezer to rapidly cool it down.

So when your ready to cook you don’t find yourself doing something similar.

When using a blast chiller you lower the temperature of the food and preserve taste, this also extends its life.

Afterwards you can store the food in a refrigerated room or cabinet and use the REGENERATION option with your oven to re-heat (or cook) and immediately serve food in large quantities as if it was just cooked.

There is no loss of moisture, crispness or flavor of the food with this process.

Regeneration is used in banquet operations such as weddings.

Ever think of how 300 dishes get served at the same time? That’s because of regeneration.

So, how do you use regeneration?

In order to use the regeneration option in any combi oven you will need to:

  1. Cook the food like it’s ready to serve
  2. Put the food in a blast chiller and lower its temperature to 10 degrees C
  3. Store it in a cold room no more than 3 days
  4. When your function is ready, take it out of the cold room
  5. Put on REGEN option in your combi oven
  6. Remove the food, prep and serve

Regeneration Programs are usually already installed and you just need to adjust the time for the product.

There are 3 types of regen programs:  

Individual plate
Plates on special racks
G/N regeneration of bulk food
